‘Food Alley’ is a food and entertainment concept featuring 17 restaurants serving food and beverages out of converted Conex containers set to open near downtown Salt Lake City. The collection of small, independent restaurants, together with a year-round farmers market and 21 artist lofts is located off State Street at 800 South. Hoang Nguyen, managing partner of Sapa Investments behind the project indicated that no major restaurant chains are allowed to preserve the unique character of the development. The 17 restaurants will be locally owned and operated. Food Alley is centered around seven main anchor restaurants and 10 “micro-restaurants” seating between 35 to 50 diners each. “It will mainly be a lot of startups, smaller businesses,” says Nguyen.
